Recipe for Pineapple Crisps!

Yesterday was a busy day for me because I was busy baking Pineapple Crisp for Chinese New Year. Yes, I'm gonna share the recipe with you guys here :)

First of all, prepare the necessary ingredients...

Here they are...

For the filling, I used the ready-to-use pineapple filling which you can buy from any supermarkets/baking supply shops.

For the dough, you need:
- 375g butter,
- 75g sugar,
- 1 teaspoon emplex (can be bought at baking supply shops),
- 1 teaspoon vanilla essence,
- 3 drops lemon yellow food colouring (for me, I didn't use it),
- 2 egg yolks,
- 1/2 egg white and
- 560g plain flour

For glazing, mix 2 egg yolks, 2 drops lemon yellow colouring and 1 egg white together.

After preparing ingredients, here we go making the pastry...

Beat butter, sugar, emplex, vanilla essence and food colouring till thickened.

Then add in eggs and mix well. It will look like this mixture (shown above).

Next, fold in plain flour and knead into dough. Set aside for 30 minute. Okay, my dough (shown above) was rather messy.

After 30 minutes or so, divide the dough into small balls. Wrap some filling with each ball. Glaze with egg yolk mixture.

Bake them in the oven at 160°C for 20 minutes or till golden brown.

When 5Fs meet up...

Let me do a quick update on the meetup with 5Fs...

It's been more than one year since we last met. In fact, it's really difficult to arrange a meetup when all of us have different schedules in school or at work. This time round, I think it was a successful one.

Of course, we managed to catch up with each other... Like Sun Mei's new job, Shu Ming and I got our BTO flats, Elvina's new relationship, Mei Ching's wedding preparation and etc...

Needless to say, we ate a lot! We settled our dinner at NYDC @ Tampines 1 and then proceeded to Haagen Dazs for our fondue :D

FOOD! Yummy..!


Belated Christmas presents!

While waiting for our fondue, we exchanged our belated Christmas gifts by drawing lots. Haha! Everyone was happy with their lots! Lucky for me, I did not prepare the same thing as Shu Ming. I got Shu Ming's gift - Mark & Spencer The Floral Collection bath cream. Yes, I initially wanted to prepare this too, but I changed my mind at the last minute. Anyway, Mei Ching got my gift which I mentioned in my previous post. Shu Ming got Sun Mei's gift which was the $20 capital-land mall vouchers; Sun Mei got Elvina's perfume from Etude House; and Elvina got Mei Ching's L'occitane hand cream and a key chain.

Last but not least, we took some photos. But I am lazy to post all the photos here...Nonetheless, this is my favourite photo of the day :)

There was a private sale for Isetan members at Scotts, so I went shopping with Elvina there. Of course, one day before the day of private sale, we went to reserve whatever things we wanted to buy first. This was because it would be difficult for us to shop and get our things when there were crowds squeezing and grabbing those sales items.
